Group HR Manager. James joined The Clove Club as Restaurant Manager in 2017, having held various managerial positions for Eclectic Hotels (Manchester), Open House (London) and having been part of the opening team for Holborn Dining Room (Rosewood London). Since joining, James has been supported in a move in to People Management by the Group, moving in to his new role whilst studying for his post graduate CIPD HR exams.
Chef/Owner, Two Lights. Chase hails from Maine, New England. He arrived at the Clove Club as Head Chef, via Momofuku Ko (NYC) and Seiobo (Sydney) and Jean-Georges (NYC). Having worked for Isaac and Clove for 3 years, we helped Chase open his own restaurant, Two Lights, in the autumn of 2018, round the corner from the Clove Club.
We continue to support our teams once they leave the group; to start something on their own or to work elsewhere. We will always recognise the part they played in the development of our business.
Dan Smith & Guy Palmer-Brown
Owners, Fordwich Arms. 1 Michelin Star. Dan and Guy both worked at the Clove Club for a number of years, Dan as Sous Chef, and Guy as Head Sommelier. They left in late 2017 to open their own pub in rural Kent, which has been met with critical acclaim, and awarded a Michelin Star.
Andrea Vailati & April Lily
Chefs Andrea and April both worked at Clove for a number of years, before heading off to Blue Hill at Stone Barns (No.12 Worlds 50 Best), with a recommendation from, and the blessing of, Chef Isaac. Having completed a year at Blue Hill, Andrea and April returned to London. Andrea began learning the art of bread with Richard Falk at new eco-friendly restaurant Lino (ex-Dairy, Clapham) and April to The Ledbury (No.42 Worlds 50 Best).
Formerly the Head Chef of The Clove Club, Tim worked alongside the Isaac, Daniel & Johnny at the foundation of the restaurant for three and a half years. Prior to The Clove Club Tim worked for four years at The Ledbury (No.42 Worlds 50 Best). He also gained a great following when establishing P Franco, an exciting wine bar in East London. Now firmly settled into North Cornwall with his partner Louise Roedkjaer, the pair hope to realise their long-held ambition to open a rural guest house and restaurant.
ANTON DE BRUYN
After working at The Clove Club, Chef Anton de Bruyn returned to Frankfurt, Germany, to open his restaurant Emma Metzler. Located in Frankfurt Sachsenhausen, the restaurant is right next to the Museum of Applied Arts, in Metzler Park. Anton and his team of chefs cooperate closely with organic suppliers around the city to get the best seasonal ingredients. His young, international team serve refined bistro food with organic wines from biodynamic vineyards.
